Karl Heinz-Drews is a large German, and his food is a mirror to meaty Germanic excesses. At his eponymous truck you’ll find burgers in Jack Daniels sauce, together with juicy ribs, steak with croquettes and soft, unctuous bands of pork belly with sauerkraut. But amid the backdrop of size is a more diminutive dish: chilli con carne ‘pralines’ – nuggets, essentially – are a perfect snack, and have been created with beer in mind. No wonder they’re so well-received in Germany. No doubt Britain will be the same.
SERVES 3-4
Ingredients:
200g kidney beans
500g ground beef
1 large onion
1 can sieved tomatoes
3 tbsp dried oregano
Pinch of salt and pepper
3 Thai chillis
Lemon zest (pinch)
1 cup flour
3 eggs
2 cups panko breadcrumbs
Method :
Sear ground beef in a pan.
Dice onion and add to ground beef with oregano and lemon zest.
Once the meat is browned, deglaze the pan with chopped tomatoes. Add chillis and kidney beans.
Season with salt and pepper and let it cook on medium heat (with lid) for 1.5 hours.
Cool down in the fridge overnight and then form into small balls. Whisk eggs and roll balls alternately in eggs and panko.
Fry for 4 minutes in oil brought to 180 degrees.
Serve with salad.
